NOTE: In common recipes, we usually add grated citrus zest. Personally, I only use organic essential oil because fresh organic citrus are not available in my region. In this recipe, we can substitute mandarin essential with orange zest or lemon zest essential oil.

- Mix dry ingredients in another bowl.
- Put 1/3 of dry ingredients in the first bowl and mix.
- Add half of the orange juice, mix well.
- Add the rest of dry ingredients, stir well.
- Add the other half of orange juice, mix well.
- Pour into a greased and floured pan.
- Bake at 375° F for 40 minutes
Icing: half honey-half soft butter flavoured with EO used for the cake.
